This Sumatra bean is earthy, syrupy and heavy bodied with a smooth quality- notes of chocolate are evident in the finish. The Golden Sumatra is a French roasted Sumatra Mandheling, giving it a richer, heavier body than our Viennese roasted Sumatra. Description Sumatran process, involves hulling the parchment off of the bean at roughly 50% moisture content (for comparison, most other processes hull coffee at around 10-12% moisture). This unique process results in a trademark flavor profile (low acidity and a richness that lingers on the back of the palate) and is a trade name, used for Arabica coffee from northern Sumatra. It was derived from the name of the Mandailing people, who produce coffee in the Tapanuli region of Sumatra. Mandheling coffee comes from Northern Sumatra, as well as Aceh.
